Culinary Application
- Acidic resistance: Sour cream made with RICH’S Versatie and white vinegar can be stable for 2 days in the refrigerator at around 5oC without becoming liquid again.
- Alcoholic resistance: RICH’S Versatie can handle alcohol in cold and hot application without splitting.
- Heat stability: is as good as dairy cream. There appears slight oil separation when the cream stands for a few minutes after cooking.
- Reduction: very quick to reduce to a nice smooth consistency without lumps, 1 cup takes 1:45 min vs 2:15 like others.
- Coating: when reduced and used for pasta, the cream gives a even coat.
- Whipping: it takes 5 minutes at medium to high speed, with added caster sugar, the product remains stable for 2 days, without sugar, stays 12 hours. The product gives good mouth-feel and pleasant taste.
- Easy to open: screw top can be closed again, unnecessary to cut to open.
